Relief printing is a process in which you subtract from the matrix and the raised surface is what is printed onto the paper. With intaglio you carve into the matrix as well but the ink is printed from the carved out lines. Relief printing will often use multiple colors to cover the entire print/paper while intaglio uses one color and does not coat the entire paper with ink. Relief is generally more of a graphic print while intaglio is more illustrative in nature.
